I've an empty 1/6 column on either side to make sure the line length of the paragraph isn't too long for readability. At least one paragraph of text is important on any page you want to rank on Google, all the text on the page is used for SEO (search engine optimisation). "Alt-tagging" your images is a good idea for SEO too, but we probably won't cover that this year. Easy enough to do if you want to run a search for it.
